Overview

This screen helps you keep the daily records for HACCP-based hygiene management required under Japan's Food Sanitation Act.

  • Check Items: define what to check, when and how. Check items are shared across the company.
  • Staff record each check in the Bookmi app (Good / Abnormal, temperature, photos, corrective action).
  • See each day's records in the Record List and the month at a glance in the Monthly Report.
  • Print the monthly record sheet or save it as a PDF to keep in the shop.
Warning

This feature helps you create and keep records. It does not judge whether your hygiene plan meets the standards, and it does not file or submit anything to the public health center. Follow the guidance of your local public health center.

Steps

1. Set up check items (once)

  1. Open Food safety → HACCP Management in the side menu and choose a shop at the top right.
  2. Open the Check Items tab and click Add Item.
  3. Choose the Category Type: General for general hygiene, Critical for critical control such as cooking.
  4. Choose the Record Type. With Fridge/Freezer Temp or Cooking Temp, a temperature must be entered when recording.
  5. Enter the Item Name and, if useful, the Description, Verification Method, Verification Timing and Corrective Action.
  6. For Critical items, use Add Menu to add a verification method per dish (for example sashimi or salad).
  7. Click Save. Drag items to reorder them (within the same category type).

2. Record every day

Staff record Good / Abnormal for each check item in the Bookmi app. When something is abnormal, they note what they did about it (corrective action). Several entries for the same item on the same day are merged into one record.

3. Review records

  1. On the Record List tab, enter a date range and click Search.
  2. Each day shows the number of records, how many check items are covered (for example 5/7), who recorded them and how many were abnormal. Days with every item recorded and nothing abnormal are marked Complete.
  3. Expand a day to see each item's judgment, and expand an item for the temperature, remarks, per-dish checks, corrective action and photos.

4. Monthly report and printing

  1. On the Monthly Report tab, choose the Month.
  2. Check the Compliance Rate, Complete Days, Abnormal Days, Total Days and the calendar.
  3. Click Print / PDF to open the print view of the A4 landscape 衛生管理記録表(HACCP) (HACCP record sheet). To keep a PDF, choose save as PDF as the printer.

On the screen

  • Calendar colors: Complete (green) means every enabled check item was recorded; Incomplete (gray) means only some were; Abnormal (red) means at least one abnormal record that day.
  • Compliance Rate: complete days ÷ days elapsed in the month (all days for past months).
  • Record sheet: each item's daily result (○ Good, × Abnormal, blank for not done or closed), notes and actions for abnormal results, and a log of abnormal events. The hygiene manager (衛生管理責任者) and check date (確認日) fields are left blank for you to fill in by hand. The sheet is always printed in Japanese.

FAQ

  • Can I enter records on this screen? Daily records are made in the app. For a day up to today with no records at all, click that day in the Monthly Report calendar to open Add HACCP Records, tick the items and save them together. Abnormal items need a corrective action.
  • The compliance rate never reaches 100%: a day only counts as complete when every enabled check item is recorded. The rate is divided by days elapsed, so regular closing days count too. Disable items you don't use.
  • Can each shop have different check items? No. Check items are shared across the company; every shop sees the same list.
  • There's a "HACCP 衛生管理" task in Tasks: it completes itself once that day's records are in. You don't need to run it as a task. → Tasks

If you don't see this screen in the side menu, check your plan or your role's permissions.
