Overview

The Cost & FL group under Insights has five screens.

  • Ingredient Cost: purchase prices, suppliers and price changes for ingredients.
  • Alcohol Cost: cost rates of drink products from their selling price and cost price.
  • FL Ratio: F (food and drink costs) and L (labor costs) as a share of sales.
  • Cost Rate Analysis: food, alcohol, labor and FL rates by day, week or month.
  • Cost Trend: daily sales, costs, labor and rates over time.

Ingredient Cost and Alcohol Cost use your registered ingredients and products. FL Ratio, Cost Rate Analysis and Cost Trend (and Shop Comparison) are calculated from daily cost records per shop (food cost, alcohol cost and labor cost).

Update an ingredient's purchase price (Ingredient Cost)

  1. Open Insights → Ingredient Cost.
  2. Search by ingredient name.
  3. Check Unit Price, Used in Products, Supplier and Price Change (Change Rate) in the list.
  4. When a price changes, click Update Price, enter the New Price and a Reason, and save.
  • Each update records the old and new price and the change rate. Price Change shows the latest change.
  • Recipe costs in Recipes are calculated from ingredient unit prices, so they follow the new price. → Ingredients, recipes and suppliers
  • Add or remove ingredients themselves under Inventory & purchasing → Ingredients.

Check drink cost rates (Alcohol Cost)

  1. Open Insights → Alcohol Cost. You can pick a shop at the top right.
  2. Check Total Items, Avg. Cost Rate and the number of categories under Category Stats.
  3. See item counts and average cost rates per category in Category Stats.
  4. Check Selling Price, Cost Price and Cost Rate for each product. You can search by product name.
  5. To enter or fix a cost, edit the product under Orders & menu → Products and fill in Cost Price.
  • Cost Rate = Cost Price ÷ Selling Price. Products without a cost show "-".
  • Colors: green up to 25%, yellow up to 30%, red above.
  • The list covers products in categories whose name contains one of ビール, 日本酒, 焼酎, ワイン, サワー, カクテル, ハイボール, ウイスキー, 梅酒, 酒, ドリンク, 飲み放題, モヒート or ボトル.
Tip

Soft drinks appear too if their category name contains ドリンク. Give alcoholic drinks their own categories to see them separately.

Check the FL ratio and cost rates

  1. Open Insights → FL Ratio and choose a shop and period.
  2. Check Total Sales, F Cost, L Cost and FL Cost Rate on the cards.
  3. Compare F Cost Rate, L Cost Rate and FL Cost Rate with the target (red line) on the bars.
  4. See monthly F, L and FL cost rates under Monthly Trend.
  5. For more detail open Cost Rate Analysis and choose Group By (Daily, Weekly or Monthly). With all shops you also get a Shop Ranking.
  6. See daily amounts in Cost Trend.

How the figures are calculated

  • F Cost = food cost + alcohol cost; L Cost = labor cost.
  • F Cost Rate, L Cost Rate and FL Cost Rate divide each by total sales.
  • In Cost Rate Analysis, Food Cost Rate = food cost ÷ food sales (total sales − alcohol sales), Alcohol Cost Rate = alcohol cost ÷ alcohol sales, and Labor Cost Rate = labor cost ÷ total sales.
  • Targets: food 30%, alcohol 25%, labor 30%, FL 60%.
  • Colors: green within target, yellow up to 1.1 times the target, red above.
Note

Labor cost is not taken automatically from shifts, attendance or payroll, and food cost is not taken from inventory or purchasing. Figures appear only for days that have a cost record.

FAQ

  • FL Ratio, Cost Rate Analysis or Cost Trend says "No data available": there are no daily cost records (food, alcohol, labor) for that shop and period. Contact support about registering them.
  • Dishes appear in Alcohol Cost: if no category name contains the words above, all products are listed. Check your drink category names.
  • The food rate differs between FL Ratio and Cost Rate Analysis: FL Ratio divides by total sales; Cost Rate Analysis divides food cost by food sales.
  • Does Update Price change a product's cost? No. Cost Price in Products does not change automatically; update it per product if needed.
Note

If you don't see this screen in the side menu, check your plan or your role's permissions.
